Peel the green plantains using a sharp knife. Cut off both ends, then slice down the length of the plantain to remove the skin. After peeling, slice the plantains thinly (about 1/8 inch thick) using a mandoline or a sharp knife.

Soaking in Water
Place the sliced plantains in a bowl of cold water for about 10 minutes. This helps to remove excess starch and ensures they fry up crispy.

Heating the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat. You can test if the oil is ready by dropping a slice of plantain in; if it sizzles, the oil is hot enough.

Frying the Plantains
Remove the plantain slices from the water and pat them dry with a clean kitchen towel. Carefully add a handful of slices to the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until they are golden brown and crispy.

Use a slotted spoon to remove the fried plantain chips from the oil and transfer them to a plate lined with paper towels to drain excess oil.
