Fried Peanut Rice Ingredients

Method

Fried Peanut Rice Directions

  1. 1

    Prepare the Rice

In a medium saucepan, combine 1 cup of Jasmine rice and 2 cups of water. Bring to a boil over high heat, then reduce to low heat, cover, and let simmer for about 15 minutes, or until the water is absorbed and the rice is tender. Remove from heat and let it sit covered for 5 minutes.

  2. 2

    Sauté Vegetables

In a large skillet or wok, heat 3 tablespoons of peanut oil over medium heat. Add 2 teaspoons of minced garlic and 1 teaspoon of minced ginger. Sauté for about 1 minute until fragrant.

  3. 3

    Add Vegetables

Add 1 cup of diced carrots and 1 cup of diced bell pepper to the skillet. Cook for about 3-4 minutes until the vegetables start to soften.

  4. 4

    Incorporate Peas

Stir in 1 cup of frozen peas and cook for an additional 2 minutes, mixing well with the other vegetables.

  5. 5

    Combine Rice and Seasonings

Add the cooked rice to the skillet with the sautéed vegetables. Pour in 3 tablespoons of soy sauce, and season with 1 teaspoon of salt and black pepper to taste. Stir everything together to combine thoroughly, ensuring the rice is heated through.

  6. 6

    Add Peanuts

Once the rice is heated, gently fold in 1 cup of chopped peanuts and 1 bunch of sliced green onions. Drizzle with 1 tablespoon of sesame oil for extra flavor.

  7. 7

    Serve

Remove from heat, taste, and adjust seasoning if necessary. Serve hot and enjoy your Fried Peanut Rice.
