    Prepare Ingredients

    Begin by gathering all the ingredients. Rinse the basmati rice under cold water until the water runs clear and set aside.

    Marinate Chicken

    In a bowl, combine the chicken thighs with salt, black pepper, minced garlic, grated ginger, and cayenne pepper. Let it marinate for at least 30 minutes.

    Cook Chicken

    Heat vegetable oil in a large pot over medium heat. Add the marinated chicken thighs and brown on all sides for about 5-7 minutes. Remove the chicken and set aside.

    Sauté Vegetables

    In the same pot, add chopped onions and diced red bell pepper. Sauté until the onions become translucent, about 3-4 minutes.

    Add Tomato Paste

    Stir in the tomato paste and cook for an additional 2 minutes to combine flavors.

    Add the rinsed basmati rice to the pot, followed by the chicken broth. Stir well and bring to a boil.
