    Take the tomahawk pork chops out of the refrigerator and let them sit at room temperature for about 30 minutes. This helps in even cooking.

    Season the Chops

    In a small bowl, mix the fennel pollen, olive oil, salt, black pepper, and garlic powder. Rub this mixture all over the pork chops, ensuring they are well coated.

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are glowing and covered with ash.

    Grill the Pork Chops

    Place the seasoned pork chops on the grill. Cook for about 5-7 minutes on each side for medium-rare, or until they reach an internal temperature of 145°F (63°C).

    During the last few minutes of grilling, place the fresh rosemary sprigs on the grill alongside the pork chops to infuse additional flavor.
