Preparation

Prepare the Ingredients

Gather all ingredients and prepare your vegetables by slicing the tomato and grilling the onions.

Make the Patties

Divide the dry-aged ground beef into two equal portions of 3 oz each and form into loose balls.

Cooking

Cook the Patties

Heat a skillet or griddle over high heat. Once hot, place the beef balls on the skillet and smash them down with a spatula until they are about 1/2 inch thick. Cook for about 3 minutes on each side until browned and cooked to your desired doneness.

Add Cheese

In the last minute of cooking, place a slice of New School American cheese on each patty and cover with a lid to melt.

Assembly

Assemble the Burger

Spread Calabrian chili aioli on the bottom half of each toasted sesame seed bun. Add the lettuce, followed by the cooked patties with melted cheese, grilled onions, tomato slices, and pickles. Top with the other half of the bun.
