Prepare the Seafood

Preheat your oven to 200°C (400°F). In a large bowl, combine the rock cod, prawns, and calamari. Drizzle with 2 tablespoons of olive oil and add minced garlic. Toss to coat.

Add Vegetables and Season

Add the cherry tomatoes, sliced fennel, and white wine to the seafood mixture. Season with salt and pepper to taste. Mix in the chopped parsley.

Wrap in Foil

Cut large pieces of aluminum foil (about 30 cm x 30 cm). Place an equal amount of the seafood and vegetable mixture in the center of each piece of foil. Drizzle with remaining olive oil.

Seal and Bake

Fold the foil over the mixture to create a sealed packet. Place packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the seafood is cooked through.

Serve

Carefully open the packets (watch for steam) and serve hot with grilled sourdough bread and lemon wedges on the side.
