Prepare the Steak

Take the dry-aged bone-in New York strip steak out of the refrigerator and let it come to room temperature for about 1 hour. Pat the steak dry with paper towels.

Season the Steak

Generously season both sides of the steak with kosher salt and freshly ground black pepper.

Cooking

Grill the Steak

Preheat a grill to high heat. Brush the grill grates with olive oil. Place the steak on the grill and cook for about 6-8 minutes on one side until well seared.

Flip and Finish Cooking

Flip the steak and continue cooking for another 6-8 minutes for medium-rare, or to your desired doneness. Use a meat thermometer to check the internal temperature (125°F for medium-rare).

Resting

Rest the Steak

Remove the steak from the grill and let it rest for 10 minutes. This allows the juices to redistribute.

Serving

Serve

Slice the steak against the grain and serve immediately with fresh rosemary sprigs and lemon wedges on the side.
