Preparation
Prepare the Steak
Take the dry-aged bone-in New York strip steak out of the refrigerator and let it come to room temperature for about 1 hour. Pat the steak dry with paper towels.
Season the Steak
Generously season both sides of the steak with kosher salt and freshly ground black pepper.
Cooking
Flip and Finish Cooking
Flip the steak and continue cooking for another 6-8 minutes for medium-rare, or to your desired doneness. Use a meat thermometer to check the internal temperature (125°F for medium-rare).
