Preparation

    Prepare the Lamb

    In a large pot, heat olive oil over medium-high heat. Season the lamb shanks with salt and pepper, then sear them in the pot until browned on all sides. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onions, carrots, celery, and garlic. Sauté until softened.

    Braise the Lamb

    Return the lamb shanks to the pot with the sautéed vegetables. Add thyme, bay leaves, and enough water to cover the meat. Cover and simmer for about 2 hours until the meat is tender.

    Prepare Sweetbreads

    Blanch sweetbreads in boiling water for 2-3 minutes, then transfer to ice water. Remove the outer membrane and sauté in a pan with butter until golden.

Potato Mash

    Cook Potatoes

    Peel and chop the potatoes, then boil in salted water until tender. Drain and mash with butter and milk until smooth.

Assembly

    Combine and Bake

    In a baking dish, layer the braised lamb and vegetables, top with sautéed sweetbreads, and then spread the mashed potatoes over the top. Use a fork to create a texture on the potatoes.

    Bake

    Preheat the oven to 200°C (400°F). Bake the pie for 25-30 minutes until the top is golden brown.
