Gelati Preparation

    Make the Gelato Base

    In a saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves, then remove from heat.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks. Gradually add a small amount of the warm milk mixture to temper the yolks. Then, whisk the yolk mixture back into the saucepan.

    Cook the Mixture

    Return the saucepan to low heat and cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 5-7 minutes).

    Remove from heat, stir in vanilla extract, and the seasonal fruit puree. Allow to cool, then refrigerate for at least 4 hours.

Sorbetto Preparation
