Prepare the Onions
Peel the onions and slice them into approximately 1/4-inch thick rings. Separate the rings and set aside.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold club soda until the mixture is smooth and has a slightly thick consistency.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Onion Rings
Dip each onion ring into the batter, allowing any excess to drip off, and carefully place them in the hot oil. Fry in batches until golden brown, about 3-4 minutes per batch. Remove and drain on paper towels.

In a small bowl, combine the mayonnaise, minced garlic cloves, lemon juice, salt, and black pepper. Mix well until smooth and creamy.
