    Prepare the Octopus

    Rinse the octopus under cold water and remove the beak if not already done. In a large pot, bring water to a boil, add salt, and carefully place the octopus in the water. Boil for 30-40 minutes until tender. Remove from water and let cool.

    Prepare the Beans

    While the octopus is boiling, drain and rinse the cannellini beans. In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and chopped celery, sautéing until soft. Add the beans, season with salt and pepper, and cook for an additional 5 minutes. Set aside.

    Grill the Octopus

    Once cooled, cut the octopus into manageable pieces. Preheat the grill to medium-high heat. Brush the octopus with olive oil, and season with salt and pepper. Grill for about 3-4 minutes per side until charred and heated through.

    Serve

    On a serving plate, place a generous spoonful of the cannellini beans mixture. Top with the grilled octopus. Squeeze fresh lemon juice over the top and garnish with chopped parsley.
