Crust Preparation

    Make the Crust

    In a mixing bowl, combine the flour, sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs. Add the egg yolk and ice water, mixing until the dough forms. Wrap in plastic and chill for 30 minutes.

    Bake the Crust

    Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork. Bake for 20-25 minutes until golden. Let cool.

Filling Preparation

    Prepare the Apricot Filling

    In a saucepan, combine chopped apricots, sugar, water, and lemon juice. Bring to a boil, then reduce heat and simmer for 30 minutes until thickened. Stir in vanilla extract and cool before filling the tart.

Gelato Preparation

    Make the Greek Yogurt Gelato

    In a bowl, whisk together Greek yogurt, heavy cream, honey, vanilla extract, and a pinch of salt until smooth. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Freeze for at least 2 hours before serving.

    Assemble the Tart

    Spread the cooled apricot filling into the baked tart shell. Serve slices of the tart with a scoop of Greek yogurt gelato on the side.
