Cured Meats

Butcher's Pâté

Fried Trotters

Method

Preparation of Affettati Misti

  1. 1

    Prepare the Cured Meats

Arrange the coppa, speck, and pancetta on a serving platter, overlapping them slightly for an appealing presentation.

  2. 2

    Serve the Butcher's Pâté

Slice the butcher's pâté and place it on the platter alongside the cured meats.

Preparation of Fried Trotters

  1. 3

    Prepare the Trotters

Clean the pork trotters thoroughly and cut them into smaller pieces. Boil them in salted water for about 1 hour until tender. Drain and let cool.

  2. 4

    Breading the Trotters

Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs seasoned with salt and pepper. Dredge each piece of trotter in flour, dip in egg, and coat with breadcrumbs.

  3. 5

    Fry the Trotters

Heat vegetable oil in a deep frying pan over medium heat. Fry the breaded trotters in batches until golden brown and crispy, about 5-7 minutes per side. Drain on paper towels.
