In a bowl, combine the chicken breast with 1 tablespoon of olive oil and fajita seasoning. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes.

Marinate the Chicken

While the chicken is marinating, slice the bell peppers and onion into thin strips.

Prepare Vegetables

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes on each side until fully cooked. Remove from the skillet and let it rest for a few minutes before slicing.

Cook the Chicken

In the same skillet, add another tablespoon of olive oil and toss in the sliced bell peppers and onion. Sauté for about 5-7 minutes until the vegetables are tender and slightly charred.

Sauté the Vegetables

Warm the tortillas in a separate pan or microwave. To assemble, place sliced chicken and sautéed vegetables on each tortilla. Drizzle with Chilitos Red and Chimoy sauce to taste.

Assemble the Fajitas

Garnish with fresh cilantro and a squeeze of lime juice. Serve immediately.

Remove the stems and seeds from the dried chili peppers. Rinse them under cold water.

Prepare the Dried Chilies

In a small pot, combine the rinsed chilies and water. Bring to a boil, then reduce heat and simmer for 10 minutes until the chilies are soft.

Soak the Chilies

Transfer the softened chilies and soaking water to a blender. Add lime juice, garlic, salt, sugar, and ground cumin. Blend until smooth.

Blend the Sauce

In a saucepan, heat the olive oil over medium heat.

Heat the Oil

Pour the blended sauce into the saucepan. Cook for 5 minutes, stirring occasionally, until heated through and slightly thickened.

Cook the Sauce

Remove from heat and let cool slightly before serving as a dip.

Wash the tomatoes, cilantro, and jalapeños thoroughly. Dice the tomatoes and red onion. Mince the garlic and finely chop the cilantro and jalapeños.

Prepare the Ingredients

In a large bowl, combine the diced tomatoes, red onion, minced garlic, chopped cilantro, and jalapeños.

Mix the Ingredients

Add lime juice, salt, and black pepper to the mixture. Stir well to combine all the ingredients.

Season the Salsa

Taste the salsa and adjust seasoning if necessary, adding more salt, lime juice, or jalapeños to your preference.

Taste and Adjust

Let the salsa chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. Serve with tortilla chips or as a topping for your favorite dishes.
