1. Marinate the Chicken
In a bowl, combine the chicken breast with 1 tablespoon of olive oil and fajita seasoning. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes.
2. Prepare Vegetables
While the chicken is marinating, slice the bell peppers and onion into thin strips.
3. Cook the Chicken
Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes on each side until fully cooked. Remove from the skillet and let it rest for a few minutes before slicing.
4. Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil and toss in the sliced bell peppers and onion. Sauté for about 5-7 minutes until the vegetables are tender and slightly charred.
5. Assemble the Fajitas
Warm the tortillas in a separate pan or microwave. To assemble, place sliced chicken and sautéed vegetables on each tortilla. Drizzle with Chilitos Red and Chimoy sauce to taste.
6. Garnish and Serve
Garnish with fresh cilantro and a squeeze of lime juice. Serve immediately.
