Method
Make the Crust
Prepare the Crust
Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until well combined.
Form the Crust
Press the mixture into the bottom of a 9-inch springform pan evenly. Bake for 10 minutes, then remove from oven and let cool.
Prepare the Cheesecake Filling
Mix the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix until well combined. Add sour cream and vanilla, mixing until smooth.
Add Eggs
Add eggs one at a time, mixing on low speed until just combined. Do not overmix.
Bake the Cheesecake
Pour and Bake
Pour the cheesecake filling into the cooled crust. Bake in the preheated oven for 55-60 minutes, until the edges are set but the center is still slightly jiggly.
Cool Down
Turn off the oven and crack the door open, allowing the cheesecake to cool for 1 hour. Remove from the oven and refrigerate for at least 4 hours, preferably overnight.
Prepare the Strawberry Puree
Blend the Strawberries
In a blender, combine hulled strawberries, sugar, and lemon juice. Blend until smooth. Taste and adjust sweetness if necessary.
Serve
Serve slices of cheesecake with a drizzle of strawberry puree on top.
