Make the Tart Crust
In a large bowl, mix the flour, granulated sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water a tablespoon at a time until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling
Peel, core, and slice the Granny Smith apples. In a bowl, toss the apple slices with lemon juice, brown sugar, and ground cinnamon. Set aside.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Roll Out the Dough
On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.

Arrange the apple mixture evenly over the tart crust.
