Prepare the saffron aioli
In a small bowl, combine mayonnaise, lemon juice, saffron threads, and chopped parsley. Mix well and set aside.
Cook the black rice
Rinse the black rice under cold water. In a saucepan, add 2 cups of water and bring to a boil. Add the black rice, a pinch of salt, and reduce to a simmer. Cover and cook for 30-35 minutes until tender.
Sauté the shrimp
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the wild shrimp and cook for 3-4 minutes until they turn pink. Season with salt and black pepper.
Assemble the dish
Once the shrimp are cooked and the rice is ready, plate the black rice and top it with the sautéed shrimp. Drizzle the saffron aioli over the top and garnish with additional parsley if desired.
