Prepare the Gnocchi

1. Boil the potatoes in salted water until fork-tender. Drain and let cool slightly, then peel and mash until smooth.

2. In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms.

3. On a floured surface, roll the dough into long ropes about 1/2 inch thick. Cut into 1-inch pieces and shape as desired.

4. Bring a pot of salted water to a boil. Drop in the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Prepare the Wild Mushroom Sauce

5. In a skillet, heat the olive oil and butter over medium heat. Add the shallots and garlic, sautéing until soft.

6. Add the mixed wild mushrooms and cook until they release their juices and are tender.

7. Pour in the vegetable broth and bring to a simmer. Reduce the liquid by half, then stir in the heavy cream.

8. Season with salt and black pepper to taste. Stir in fresh parsley before serving.

Combine and Serve

9. Toss the cooked gnocchi with the wild mushroom sauce and serve immediately.
