Prepare the Beef
Preheat your oven to 450°F (230°C). In a small bowl, mix together the kosher salt, black pepper, rosemary, thyme, and minced garlic. Rub the mixture all over the prime rib, ensuring it’s evenly coated. Drizzle olive oil over the beef and rub it in.

Roast the Beef
Place the seasoned prime rib on a roasting rack in a baking dish. Roast in the preheated oven for 20 minutes to get a good sear. Then reduce the oven temperature to 325°F (160°C) and continue roasting for about 1.5 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

Rest and Slice
Once cooked, remove the prime rib from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.
