Preparation and Cooking

    Prepare the Stuffing

    In a skillet, melt the butter over medium heat. Add shallots and garlic, sauté until translucent.

    Add Mushrooms and Duck Liver

    Stir in the wild mushrooms and cook for about 5 minutes until tender. Add the chopped duck liver and cook for another 2-3 minutes until just cooked. Season with thyme, salt, and black pepper.

    Combine with Stock

    Add chicken stock and lemon zest to the mixture, stir well and let cool.

    Prepare the Cornish Hen

    Preheat the oven to 180°C (350°F). Pat the Cornish hen dry and season the cavity with salt and pepper.

    Stuff the Hen

    Carefully stuff the mushroom and duck liver mixture into the cavity of the hen. Truss the legs to secure the stuffing.

    Roast the Hen

    Rub the outside of the hen with olive oil and season with salt and pepper. Place in a roasting pan and roast for about 1 hour, or until the internal temperature reaches 75°C (165°F).

    Rest and Serve

    Remove from the oven and let rest for 10 minutes before carving. Serve warm with your choice of sides.
