    Searing the Beef

    In a large heavy pot, heat olive oil over medium-high heat. Season the ossobuco with salt and pepper, then sear each piece in the pot until browned on all sides. Remove the beef and set aside.

    Sautéing Vegetables

    In the same pot, add onions, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes.

    Combining Ingredients

    Return the seared ossobuco to the pot. Add the beef broth, bay leaves, thyme, and black peppercorns. Bring to a simmer.

    Braising

    Cover the pot and reduce the heat to low. Let it braise for about 2 to 2.5 hours, or until the beef is tender and falling off the bone.

    Finishing Touches

    Once cooked, remove the ossobuco and set aside. Strain the broth to remove vegetables and herbs, then return the broth to the pot. Add the chopped parsley and adjust seasoning with salt to taste.

    Serve the ossobuco in bowls and ladle the broth and vegetables over the top. Enjoy!
