Add Flour
Once the butter has melted and the mixture is boiling, remove from heat and add the flour all at once. Stir vigorously with a wooden spoon until the dough forms a ball and pulls away from the sides of the pan.

Cool the Dough
Allow the dough to cool for about 5 minutes. Then, add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Incorporate the Cheese
Fold in the grated Comté cheese until evenly distributed throughout the dough.

Pipe the Gougères
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper. Use a piping bag fitted with a round tip to pipe small mounds (about the size of a golf ball) onto the prepared baking sheet, leaving space between each mound.

Bake
Bake in the preheated oven for 20-25 minutes or until the gougères are puffed and golden brown. Avoid opening the oven door during baking.
