    Prepare the Steak

    Season the steak with salt and crushed black peppercorns on both sides. Heat olive oil in a skillet over medium-high heat.

    Cook the Steak

    Add the steak to the skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let it rest.

    Make the Sauce

    In the same skillet, add minced garlic and sauté for 1 minute. Deglaze the pan with brandy, stirring to scrape up any brown bits. Add heavy cream and simmer until slightly thickened. Stir in additional crushed black pepper to taste.

    Sauté the Spinach

    In another pan, heat a little olive oil and sauté the spinach until wilted. Season with salt.

    Serve

    Slice the steak and serve it on a plate with sautéed spinach and hand-cut fries. Drizzle the peppercorn sauce over the steak.
