Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Make the Choux Pastry
In a medium saucepan, combine the water, butter, salt, and pepper. Bring to a boil over medium heat. Once boiling, add the flour all at once and stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Add the Cheese
Stir in the grated cheese and a pinch of nutmeg until well combined.

Pipe the Dough
Transfer the dough to a piping bag fitted with a large round tip. Pipe small mounds (about 1 inch in diameter) onto the prepared baking sheet, spacing them about 2 inches apart.

Bake the Gougères
Bake in the preheated oven for 20-25 minutes or until the gougères are puffed, golden brown, and firm to the touch. Do not open the oven door while baking.

Serve
Remove from the oven and let them cool slightly. Serve warm as a delightful cocktail hour treat.
