    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into thin strips to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Drain the soaked fries and pat them dry. Fry them in batches until golden brown and crispy, about 5-7 minutes per batch.

    Season the Fries

    Remove fries from oil and drain on paper towels. Season immediately with salt and pepper.

    Make the Truffle Aioli

    In a bowl, combine mayonnaise, black truffle oil, minced garlic, lemon juice, and salt. Mix until well combined.
