Prepare the Potatoes
Peel the Russet potatoes and cut them into thin fries (about 1/4 inch thick). Rinse the cut fries in cold water to remove excess starch, then soak them in water for at least 30 minutes. Drain and pat dry.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accurate temperature.

Fry the Potatoes
Carefully add a batch of fries to the hot oil, making sure not to overcrowd the pot. Fry for about 4-5 minutes until golden brown. Remove with a slotted spoon and drain on paper towels. While still hot, sprinkle with salt.
