Melt the Chocolate
In a heatproof bowl, melt the Belgian dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, whip the whole cream until soft peaks form. Be careful not to overwhip.

Combine Mixtures
Gently fold the melted chocolate into the egg mixture until fully incorporated. Then, carefully fold in the whipped cream until no streaks remain.

Chill
Pour the mousse into serving cups and refrigerate for at least 2 hours or until set.

Once set, serve the dark chocolate mousse chilled, optionally garnished with whipped cream or chocolate shavings.
