Method
Preparation
- 1
Make the Crêpes
In a mixing bowl, whisk together the flour, milk, eggs, melted butter, and salt until smooth. Let the batter rest for 30 minutes.
- 2
Cook the Crêpes
In a non-stick skillet over medium heat, melt a little butter. Pour about 1/4 cup of batter into the pan, swirling to coat the bottom. Cook for 1-2 minutes on each side until lightly golden. Repeat with the remaining batter.
- 3
Prepare the Orange Sauce
In a saucepan, combine orange juice, orange zest, and sugar. Cook over medium heat until the sugar dissolves, then simmer for 5 minutes.
- 4
Flambé
Add butter and Grand Marnier to the sauce and bring to a simmer. Carefully ignite the Grand Marnier with a long lighter. Allow the flames to subside.
- 5
Serve
Fold the crêpes into quarters and place them in the orange sauce, allowing them to soak for a minute. Serve warm.
