Prepare the Duck
Rub the duck legs with salt, black peppercorns, and thyme. Place crushed garlic on top and refrigerate for at least 24 hours.

Cook the Duck
Preheat your oven to 250°F (120°C). Place the duck legs in a baking dish and cover with duck fat. Cook in the oven for about 2-3 hours until tender.

Crisp the Duck
Remove the duck legs from the fat and pat dry. Heat a skillet over medium-high heat and sear the duck legs skin-side down until crispy, about 5-7 minutes.
