Soup Preparation

    Prepare the Chestnuts

    Preheat the oven to 200°C (400°F). Cut a small 'X' on the flat side of each chestnut. Roast them in the oven for about 20 minutes until the skins start to peel. Remove from the oven and let cool slightly before peeling the chestnuts.

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until softened.

    Cook the Soup

    Add the peeled chestnuts, vegetable broth, salt, pepper, and thyme to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes.

    Blend the Soup

    Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend just half of the soup.

    Serve

    Ladle the soup into bowls and top with a dollop of Port wine crème fraiche before serving.
