Preparation Steps

  1. 1

    Prepare the Foie Gras Mixture

In a food processor, blend the Hudson Valley foie gras until smooth. Add heavy cream, eggs, salt, black pepper, and brandy. Blend until all ingredients are well combined.

  2. 2

    Bake the Terrine

Preheat the oven to 150°C (300°F). Pour the foie gras mixture into a terrine mold and cover with foil. Place the mold in a water bath and bake for 45-60 minutes, or until set.

  3. 3

    Cool and Serve

Remove the terrine from the oven and let it cool to room temperature. Refrigerate for at least 4 hours before serving. Slice the terrine and serve it with toasted brioche, house chutney, onion confit, and a side of mixed greens.
