Poach the Pears
Once the mixture comes to a simmer, reduce the heat to low. Peel the pears, leaving the stems intact, and carefully place them in the poaching liquid. Simmer for about 20-25 minutes, or until the pears are tender but still hold their shape.

Cool and Store the Pears
Remove the pears from the liquid and allow them to cool. Strain the poaching liquid and return it to the saucepan. Increase the heat to medium-high and reduce the liquid until it thickens into a syrup, about 10-15 minutes.

Serve
Serve the poached pears warm or chilled, drizzled with the reduced red wine syrup and a scoop of vanilla ice cream on the side.
