Method

Preparation of Walleye

  1. 1

    Season the Walleye

Rub the walleye fillets with olive oil and sprinkle with Cajun seasoning. Allow to marinate for at least 15 minutes.

  2. 2

    Cook the Walleye

Heat a grill or skillet over medium-high heat. Cook the seasoned walleye fillets for about 4-5 minutes on each side or until they are cooked through and have nice grill marks. Remove from heat and flake into pieces.

Crunchy Slaw Preparation

  1. 3

    Mix the Slaw

In a large bowl, combine shredded cabbage, shredded carrot, sliced red onion, chopped cilantro, lime juice, and salt. Toss until well combined and set aside.

Charred Corn Salsa Preparation

  1. 4

    Char the Corn

If using fresh corn, grill or char the corn kernels in a pan until slightly browned. If using frozen corn, simply thaw and proceed to the next step.

  2. 5

    Combine Salsa Ingredients

In a bowl, mix the charred corn, diced red bell pepper, minced jalapeño, diced red onion, chopped cilantro, lime juice, and salt. Stir well to combine and set aside.

Avocado Cream Preparation

  1. 6

    Make Avocado Cream

In a blender, combine ripe avocado, sour cream, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning as needed.

Wonton Strips Preparation

  1. 7

    Fry Wonton Strips

Heat vegetable oil in a frying pan over medium heat. Cut wonton wrappers into strips and fry until golden brown and crispy. Remove and drain on paper towels.

Dirty Rice Preparation

  1. 8

    Cook Rice

In a saucepan, sauté diced onion, green bell pepper, and minced garlic until translucent. Add rice and stir, then add chicken broth and Cajun seasoning. Bring to a boil, then reduce heat and simmer for about 20 minutes or until rice is cooked and liquid is absorbed. Season with salt to taste.

Taco Assembly

  1. 9

    Assemble Tacos

Warm corn tortillas in a dry skillet. On each tortilla, layer flaked walleye, crunchy slaw, charred corn salsa, crumbled queso fresco, and a drizzle of avocado cream. Top with wonton strips for crunch. Serve with dirty rice on the side.
