Method
Preparation of Walleye

Season the Walleye
Rub the walleye fillets with olive oil and sprinkle with Cajun seasoning. Allow to marinate for at least 15 minutes.

Mix the Slaw
In a large bowl, combine shredded cabbage, shredded carrot, sliced red onion, chopped cilantro, lime juice, and salt. Toss until well combined and set aside.
Charred Corn Salsa Preparation

Combine Salsa Ingredients
In a bowl, mix the charred corn, diced red bell pepper, minced jalapeño, diced red onion, chopped cilantro, lime juice, and salt. Stir well to combine and set aside.
Avocado Cream Preparation

Make Avocado Cream
In a blender, combine ripe avocado, sour cream, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning as needed.
Wonton Strips Preparation

Fry Wonton Strips
Heat vegetable oil in a frying pan over medium heat. Cut wonton wrappers into strips and fry until golden brown and crispy. Remove and drain on paper towels.
Dirty Rice Preparation

Cook Rice
In a saucepan, sauté diced onion, green bell pepper, and minced garlic until translucent. Add rice and stir, then add chicken broth and Cajun seasoning. Bring to a boil, then reduce heat and simmer for about 20 minutes or until rice is cooked and liquid is absorbed. Season with salt to taste.
