Salmon Preparation

Prepare the Glaze

In a small bowl, mix together honey, chipotle peppers in adobo sauce, soy sauce, lime juice, salt, and black pepper until well combined.

Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the honey-chipotle glaze over them. Let them marinate for at least 30 minutes, turning occasionally.

Cook the Salmon

Preheat the grill or oven to medium-high heat. Grill the salmon for about 5-6 minutes on each side, basting with the leftover glaze, until the salmon is cooked through and flaky.

Tomatillo Rice Preparation

Cook the Rice

In a medium saucepan, combine jasmine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until rice is tender and water is absorbed.

Add Tomatillos and Cilantro

Once the rice is cooked, stir in the chopped tomatillos and cilantro. Fluff the rice with a fork and keep covered until ready to serve.

Mix the Salsa Ingredients

In a medium bowl, combine diced pineapple, red onion, jalapeño, lime juice, cilantro, and salt. Mix well and let sit for at least 10 minutes to let the flavors meld.
