Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix well until the crumbs are evenly coated with butter.

Bake the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and let it cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar and continue to beat until well combined. Add the pink champagne and vanilla extract, mixing until smooth.

Add Eggs and Sour Cream
Add the eggs one at a time, mixing well after each addition. Finally, add the sour cream and mix until fully incorporated.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.

Prepare the Whipped Cream
In a mixing bowl, beat the heavy cream and powdered sugar until soft peaks form. Be careful not to overwhip.

Once the cheesecake is fully chilled, carefully remove it from the springform pan. Top with the raspberry sauce and dollops of whipped cream.
