Rinse and Cook Quinoa
In a fine mesh strainer, rinse 1 cup of quinoa under cold running water until the water runs clear. In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil over medium-high heat.

Simmer Quinoa
Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15 minutes, or until quinoa is fluffy and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

Sauté Onions and Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 0.5 cups of diced red onion and 3 teaspoons of minced garlic, sautéing until the onions are translucent, about 3-4 minutes.

Add Other Vegetables
Stir in 1 cup of diced red bell pepper, 1 cup of diced zucchini, and 2 cups of chopped spinach. Cook for another 5-7 minutes until the vegetables are tender.

Add 1 teaspoon of cumin, and season with salt and black pepper to taste. Mix well to combine.
