Vegetable Bruschetta

    Prepare the Baguette

    Slice the baguette into 1/2 inch thick slices. Preheat your oven to 400°F (200°C).

    Toast the Bread

    Arrange the baguette slices on a baking sheet and drizzle with 1 tablespoon of olive oil. Toast in the oven for about 5-7 minutes until golden brown.

    Prepare the Tomato Mixture

    Dice the tomatoes and finely chop the fresh basil and garlic. In a mixing bowl, combine the tomatoes, basil, garlic, remaining 2 tablespoons of olive oil, balsamic vinegar, salt, and black pepper. Mix well.

    Assemble the Bruschetta

    Once the baguette slices are toasted, remove from the oven and top each slice with the tomato mixture. Serve immediately.

Stuffed Mushrooms

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Mushrooms

    Clean the mushrooms and remove the stems. Finely chop the stems and set aside.

    Make the Filling

    In a mixing bowl, combine cream cheese, chopped mushroom stems, Parmesan cheese, garlic powder, parsley, olive oil, salt, and black pepper. Mix until well combined.

    Stuff the Mushrooms

    Fill each mushroom cap with the cream cheese mixture, packing it slightly.

    Bake the Mushrooms

    Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes until the tops are golden brown and the mushrooms are tender.
