Method

Prepare the Shrimp

  1. 1

    Marinate the Shrimp

In a bowl, combine the peeled and deveined shrimp with olive oil, minced garlic, paprika, salt, black pepper, and lime juice. Toss well to coat the shrimp evenly. Cover and refrigerate for 15-30 minutes to let the flavors meld.

  2. 2

    Cook the Shrimp

Preheat a grill or grill pan over medium-high heat. Remove the shrimp from the marinade and discard the marinade. Grill the shrimp for about 2-3 minutes on each side, or until they are opaque and slightly charred. Remove from heat and set aside.

Prepare the Charred Corn Salsa

  1. 3

    Char the Corn

If using fresh corn, grill the corn on the cob for about 10-15 minutes, turning occasionally, until charred. If using frozen corn, you can sauté it in a pan over medium-high heat until slightly charred. Let it cool before handling.

  2. 4

    Assemble the Salsa

In a mixing bowl, combine the charred corn kernels, diced red onion, diced red bell pepper, chopped cilantro, lime juice, salt, and black pepper. Stir well to combine all the ingredients evenly.

Serve

  1. 5

    Combine and Serve

Serve the grilled shrimp on a plate topped with the charred corn salsa. Enjoy your delicious shrimp with a refreshing charred corn salsa!
