Salmon Preparation

    Prepare the Salmon

    Preheat your grill or skillet over medium-high heat. In a small bowl, mix olive oil, salt, black pepper, and lemon juice. Rub this mixture over the salmon fillets.

    Cook the Salmon

    Place the salmon fillets on the grill or skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and has a nice char. Remove from heat and set aside.

Charred Corn Salsa Preparation

    Char the Corn

    If using fresh corn, grill the corn on a grill or skillet until charred, about 10 minutes. If using frozen corn, sauté in a skillet until golden brown.

    Mix Salsa Ingredients

    In a large bowl, combine charred corn, diced red bell pepper, chopped red onion, cilantro, lime juice, minced jalapeño, salt, and black pepper. Mix well to combine.

Bowl Assembly

    Assemble the Bowls

    In serving bowls, place cooked quinoa or rice as the base. Top with the grilled salmon fillets, and then add a generous scoop of the charred corn salsa.

    Garnish and Serve

    Top with sliced avocado and serve with lime wedges on the side.
