Salmon Preparation

    Season the Salmon

    In a small bowl, combine olive oil, garlic powder, salt, and black pepper. Rub this mixture all over the salmon fillets.

    Preheat the Grill

    Preheat your grill to medium-high heat (around 400°F or 200°C).

    Grill the Salmon

    Place the seasoned salmon fillets on the grill skin-side down. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and has nice grill marks.

    Add Lemon

    During the last minute of grilling, squeeze fresh lemon juice over the salmon.

    Char the Corn

    In a skillet over medium-high heat, add the fresh corn kernels. Cook for about 5-7 minutes, stirring occasionally, until the corn is charred and golden.

    Prepare the Vegetables

    Finely chop the red onion, halve the cherry tomatoes, and chop the cilantro. If using, finely dice the jalapeño.

    Mix the Salsa

    In a large bowl, combine the charred corn, red onion, cherry tomatoes, cilantro, lime juice, jalapeño, salt, and black pepper. Mix well until combined.
