Preparing the Chicken

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Chicken
Pat the whole chicken dry with paper towels. This helps the skin become crispy.

In a small bowl, mix together olive oil, salt, black pepper, garlic powder, paprika, dried thyme, lemon zest, and lemon juice. Rub this mixture all over the chicken, making sure to get under the skin and inside the cavity.

Roast the Chicken
Place the chicken on a roasting rack in a baking dish, breast side up. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).

Remove the chicken from the oven and let it rest for about 10-15 minutes before carving. This allows the juices to redistribute throughout the meat.

While the chicken is roasting, prepare the fries according to the package instructions, usually involving baking or frying until golden and crispy.
