Prepare the Rosemary Syrup
In a small saucepan, combine equal parts water and sugar (1 cup each), and add a handful of fresh rosemary sprigs. Heat gently until the sugar dissolves completely. Allow the mixture to simmer for 5-10 minutes to infuse the rosemary flavor. Remove from heat, let it cool, and strain to remove the rosemary. Store in a sealed container in the fridge.
Mixing the Gimlet

Combine Ingredients
In a cocktail shaker, add 2 ounces of Gray Whale Gin, 1 ounce of rosemary syrup, and 1 ounce of fresh lime juice.

Shake
Fill the shaker with ice and shake vigorously for about 15 seconds until well-chilled.

Strain and Serve
Strain the mixture into a chilled cocktail glass.

Garnish
Garnish the drink with a fresh sprig of rosemary on top.
