Oven Roasted Vegetables

    Prepare the Vegetables

    Preheat the oven to 400°F (200°C). Cut the tomatoes into halves, trim the asparagus, and slice the mushrooms.

    Season the Vegetables

    In a bowl, combine the tomatoes, asparagus, and mushrooms with olive oil, salt, and black pepper. Toss until evenly coated.

    Roast the Vegetables

    Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.

Omelet Filling

    Sauté the Spinach

    In a pan over medium heat, add a drizzle of olive oil. Mince the garlic and add it to the pan. Sauté for about 1 minute until fragrant, then add the spinach and cook until wilted. Set aside.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk until well combined. Season with a pinch of salt and pepper.

    Cook the Omelet

    In a non-stick skillet over medium heat, pour in the whisked eggs. Cook until the edges begin to set, then gently lift the edges with a spatula to allow uncooked egg to flow to the bottom.

    Add Fillings

    Once the omelet is mostly set, add the sautéed spinach, roasted vegetables, and mozzarella cheese to one half of the omelet. Fold the other half over and let it cook for another minute until the cheese is melted.

Smoked Gouda Hash Browns

    Cook the Hash Browns

    In a separate skillet, melt the butter over medium heat. Add the frozen hash browns and cook according to package instructions until crispy and golden brown. Stir in the smoked gouda cheese during the last few minutes of cooking.

Toast

    Toast the Bread

    While the omelet and hash browns are cooking, toast the slices of bread in a toaster or under a broiler until golden brown.
