Preparation

    Prepare the Corned Beef

    If not already cooked, braise the corned beef in a pot of water with spices for about 2.5 to 3 hours until tender. Allow to cool, then slice thinly.

    Prepare the Sauerkraut

    Drain the sauerkraut and rinse under cold water. Heat in a small saucepan over medium heat until warmed through, about 5 minutes.

    Prepare the Russian Dressing

    In a small bowl, mix together the Russian dressing ingredients (ketchup, mayonnaise, horseradish, Worcestershire sauce, and pepper) until well combined.

Assembly

    Assemble the Sandwich

    Lay out 4 slices of caraway rye bread on a clean surface. Spread 1 tablespoon of Russian dressing on each slice. Layer with sliced corned beef, warmed sauerkraut, and 1 slice of gruyere cheese on top.

    Top the Sandwich

    Place the remaining 4 slices of rye bread on top of the cheese to form sandwiches.

Cooking

    Grill the Sandwich

    Heat a skillet or griddle over medium heat. Butter the outside of the sandwiches lightly. Grill each sandwich for about 4-5 minutes per side, or until the bread is golden brown and the cheese has melted.

    Serve

    Remove the sandwiches from the skillet, cut in half, and serve hot with extra Russian dressing on the side for dipping.
