Prepare the Walleye

    Season the Fish

    Sprinkle salt and black pepper evenly on both sides of the walleye fillets.

    Set Up Breading Station

    Prepare three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs and grated Parmesan cheese.

    Bread the Walleye

    Dredge each fillet in flour, dip into the beaten eggs, and then coat with the panko-Parmesan mixture. Press lightly to adhere.

    Cook the Fish

    In a large skillet, heat olive oil over medium heat. Add the breaded walleye fillets and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove and keep warm.

Prepare the Rice Pilaf

    Sauté the Aromatics

    In a saucepan, melt butter over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Toast the Rice

    Add the long-grain rice to the pan, stirring frequently to coat with butter and toast slightly for about 2 minutes.

    Cook the Rice

    Pour in the chicken broth and add salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and liquid is absorbed. Fluff with a fork before serving.

Prepare the Parmesan Broccoli

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Toss Broccoli

    In a mixing bowl, combine broccoli florets, olive oil, garlic powder, salt, and black pepper. Toss until the broccoli is well coated.

    Roast the Broccoli

    Spread broccoli on a baking sheet in a single layer. Roast in the preheated oven for about 15-20 minutes, until tender and slightly crispy.

    Add Parmesan

    In the last 5 minutes of roasting, sprinkle grated Parmesan cheese over the broccoli, then return to the oven until the cheese is melted and bubbly.
