Hollandaise Sauce

    Prepare the Hollandaise Sauce

    In a heatproof bowl, whisk together egg yolks and lemon juice until pale and thick. Place the bowl over a pot of simmering water (double boiler) and continue whisking while slowly adding melted butter. Whisk until the sauce is thickened. Season with salt and cayenne pepper, then remove from heat.

    Cook the Spinach and Ham

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add fresh spinach and cook until wilted. Remove from the skillet and set aside. In the same skillet, grill the sliced ham until heated through and slightly crispy.

Smoked Gouda Hash Browns

    Make the Hash Browns

    In a large skillet, heat olive oil over medium-high heat. Add the grated potatoes, season with salt and pepper, and flatten them into a single layer. Cook until golden brown on one side, about 5-7 minutes, then flip and cook the other side. Sprinkle shredded smoked gouda on top and cover to melt the cheese. Cook for an additional 2-3 minutes.

    Poach the Eggs

    Fill a saucepan with water and add vinegar. Bring to a gentle simmer. Crack each egg into a small bowl and gently slide it into the water. Poach for about 3-4 minutes or until the whites are set but yolks remain runny. Remove with a slotted spoon and drain on paper towels.

    While the eggs are poaching, split the English muffins in half and toast them until golden brown.
