Preheat the Oven
Preheat your oven to 200°C (392°F) to ensure it's hot enough for baking the fondants.

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (bain-marie) and stir until melted and smooth. Remove from heat and let cool slightly.

Add Flour and Vanilla
Sift the all-purpose flour and salt into the chocolate mixture, then add the vanilla extract. Gently fold the mixture until just combined; do not overmix.

Bake
Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft. Remove from the oven and let cool for 1-2 minutes.

Carefully run a knife around the edge of each ramekin to loosen the fondants. Invert onto a plate and serve immediately with a scoop of vanilla ice cream and a mint leaf for garnish.
