Roasted Poblano Salsa

Prepare Chicken Breast

Season the Chicken
In a small bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Rub this mixture all over the chicken breasts.

Cook the Chicken
Preheat the oven to 375°F (190°C). Place the seasoned chicken breasts on a baking sheet and roast for 25-30 minutes or until the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing.
Make Roasted Poblano Salsa

Roast the Poblano Peppers
Preheat a grill or broiler. Place the poblano peppers directly on the grill or under the broiler, turning occasionally until the skin is charred and blistered. Remove and place in a bowl, covering with plastic wrap for 10 minutes to steam. Once cooled, peel off the skins, remove seeds, and chop.

Prepare the Salsa
In a mixing bowl, combine the roasted poblano peppers, diced tomatoes, finely chopped red onion, minced garlic, chopped cilantro, lime juice, and salt. Mix well to combine.
Assemble the Bowl

Combine Ingredients
In a serving bowl, place a sliced chicken breast and top with a generous amount of roasted poblano salsa. Serve immediately.
