To Prepare the Biscuits

Preheat the oven
Preheat your oven to 425°F (220°C).

Mix dry ingredients
In a large bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt.

Cut in butter
Add 1 tablespoon of unsalted butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Add milk and cheese
Stir in 3 tablespoons of milk and 1 cup of shredded Tillamook cheddar cheese until just combined.

Shape the biscuits
Turn the dough out onto a lightly floured surface and gently knead it a few times. Pat it into a 1-inch thick round and cut out biscuits using a biscuit cutter.

Bake
Place the biscuits onto a baking sheet and bake in the preheated oven for 12-15 minutes or until golden brown.
To Prepare the Sausage Gravy

Cook the sausage
In a large skillet over medium heat, crumble and cook 1 pound of country sausage until browned and fully cooked.

Make the roux
Sprinkle 0.5 cup of all-purpose flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.

Season the gravy
Season with 1 teaspoon of black pepper and salt to taste. Stir well.

Serve
Slice the baked biscuits in half and ladle the sausage gravy over them. Top with 4 slices of crumbled candied bacon for garnish.
